Ingredients

Basmati Rice 2 cups presoaked for ½ hour zarda.jpg
Ghee 3 Tablespoons
Cashew halves raw ¼ cup
Sliced almonds ¼ cup
Water 4¼ cups
Salt pinch
Saffron 4 to six strands
Cardamom powder ¼ teaspoon
Cinnamon powder ¼ teaspoon
Sugar 1 Cup
Lemon juice ½ teaspoon
Raisins ¼ cup 

Directions

  • Sauté Cashews and almonds in ghee for about a minute. Add rice. Toss it around so the Rice is coated with oil. The rice will start turning opaque white.
  • In another pot add water, sugar, saffron strands, cardamom, cinnamon and bring it to a boil.
  • Add lemon juice, Raisins and rice from Step 4. Bring it to a boil.
  • Cover the pan, turn down heat simmer on low heat for 17 minutes. Turn off heat. Let it rest for 20 minutes.
